TH: What’s the most exciting aspect of your job at Caterer?
ML: The sheer range of questions fired at me from all corners of hospitality.
TH: What has been the most daunting presentation or public speech you have ever given and why?
ML: Halfway through the BHA’s centenary dinner at the Foreign and Commonwealth Office, Bob Cotton asked me if I could give an off the cuff speech as David Michels was running late… Queue 20 minutes of nerve-jangling speech writing in the loo, only for David to arrive (thank the Lord) in time.
TH: If you had to give one piece of valuable advice to a novice and nervous public speaker what would it be?
ML: Before you write a speech, bullet point what you need to convey. Research your audience and temper your speech accordingly. Check where you are speaking in advance (is there a hand mike? Lecturn? etc).
TH: What’s your biggest frustration when being presented to?
ML: Death by PowerPoint slides.
TH: If you had 10 minutes on prime time TV what would your subject matter be?
ML: Welsh Rugby: the Glory Years.
TH: Who have you ever met that made you most star struck?
ML: I once served one of my heroes, Jerry Dammers, founder of the Specials and musical genuis, when I worked at a book shop. I could barely speak.
TH: If you were planning a cosy night in what film and meal choice would you opt for?
ML: Captains Courageous and a lamb madras.
TH: What’s the last restaurant you visited?
ML: Porters in Covent Garden at lunchtime today – great steak and kidney pudding.
TH: Where are you going on holiday next week (Just being nosy!)?
ML: Cheshire.
TH: What would you be doing right now if you hadn’t pursed a career in journalism?
ML: Travel writer in South America.
TH: Tell us something about yourself we wouldn’t know?
ML: I’m learning how to grow roses in our garden.
